How to cook rice

Gohan no takikata

1 4/5 cups/360ml short-grain rice or sushi rice
2 1/2 cups/500ml water


  1. 1. In a bowl, pour fresh water on the rice. Quickly drain the water after rinsing the rice.
  2. 2. Gently rub the rice between the palms of your hands with a grinding motion. Add water, mix gently, and drain the milky water.
  3. 3. Add fresh water again and drain. Repeat this process 3 or 4 times until the water becomes clear.
  4. 4. Drain the rice through a strainer. Let sit for 30 minutes, which will allow the rice to absorb water. Drain the rice again and put in a pot with the amount of water indicated in the ingredients.
  1. 5. Cover, and bring the pot to a boil over high heat. Let the rice cook for about 3 minutes. If the liquid starts boiling over the edge of the pot, reduce the heat. Do not uncover the pot.
  2. 6. Reduce the heat to low and let the rice cook for 10 minutes.
  3. 7. Turn off the heat and let the rice sit covered for 10 minutes to fully absorb the moisture.
