Green Beans with Sesame Vinegar Dressing

Ingredients (Serves 2)

150 g green beans

For the sesame vinegar dressing:
4 tbsp toasted sesame seeds
4 tbsp rice vinegar
2 tbsp dashi (made from kombu kelp and bonito flakes)
1 tbsp mirin
1 tbsp usukuchi soy sauce
1 tsp sugar


  1. 1. Remove the fibers along the length of the green beans, then cut into thirds.
  2. 2. Add salt to boiling water, then add the green beans and cook.
  3. 3. After about 1 min, remove and transfer to ice water. Transfer to a paper towel to dry.
  4. 4. Make the sesame vinegar dressing: In a frying pan, toast the sesame seeds, then transfer to a suribachi (Japanese grinding bowl) and grind.
  1. 5. Add the rice vinegar, dashi, mirin, usukuchi soy sauce, and sugar, and stir to combine.
  2. 6. Add the green beans and toss to coat.
  3. 7. Transfer to a serving dish, and serve.
