Julienned Vegetable Salad with Rika's Ginger Dressing

Ingredients (Serves 2)

1/2 ginger flower bud (myoga)
1/4 Japanese cucumber
1/3 celery stalk with the fibers along its length removed
1/4 carrot
1/4 red bell pepper
1/4 yellow bell pepper

Ginger Dressing:
1 tbsp grated ginger
1 tbsp ponzu
1 tbsp sesame oil

Directions

  1. 1. Make the dressing: In a bowl, mix together the grated ginger, ponzu, and sesame oil.
  2. 2. Cut the ginger flower bud (myoga), Japanese cucumber, celery, and carrot into thin strips.
  3. 3. Even out the thickness of the pieces of both the red and yellow bell peppers, and cut them into thin strips.
  4. 4. In a bowl, combine the vegetables and dressing, then toss to evenly coat and serve.
