  1. 1. Combine the mirin, soy sauce, and sugar in a pot, and heat.
  2. 2. When it comes to a boil, reduce heat to low and cook down, stirring frequently until the sauce thickens (for about 20 minutes).
  3. 3. When the sauce has reduced to about 2/3 of its original volume, remove from heat and let cool overnight. Transfer to a food storage container.
