Strawberry Soymilk Smoothie

This beautiful, double layered dessert is a treat for both the tummy and the eyes! One layer is a tangy strawberry smoothie, and the other layer is a fragrant, yuzu and spice granita.

Ingredients (Serves 2)

  • [Smoothie]

    • 120 g strawberries
    • 80 g plain yogurt (unsweetened)
    • 60 ml soy milk (non-homogenized)
    • 15-25 g granulated sugar
      Note

      *Adjust the amount of sugar based on the sweetness of the strawberries.

  • [Granita]

    • 50 ml red wine
    • 1/2 tsp yuzu juice
    • 30 g granulated sugar
    • Cinnamon stick, as needed
    • Star anise, as needed
    • Clove, as needed
  • 2 white chocolate bars
    Note

    *Melt and spread flat, then punch out circles to fit the size of the serving glasses.

  • Yuzu peel, as needed
  • 60 ml water

Directions

Make the [Smoothie]. Cut each strawberry into 8 pieces and spread them out on a metal tray to freeze. Blend the frozen strawberries along with the other ingredients in a blender until smooth.

Make the [Granita]. Combine all of the ingredients and 60 ml of water in a pot and bring just to a simmer. Strain out the solids and pour the liquid into a metal tray, and freeze until solid. Once it has solidified, use a fork to break into small pieces.

Fill two glasses partway with [Granita], then place the white chocolate discs on top. Pour in the [Smoothie] and garnish with yuzu peel.
