Natto and Avocado Somen Noodles

Chilled somen noodles topped with natto and avocado - the perfect combination! Don't forget to sprinkle with scallions and kizaminori, as this will really help bring the flavors together.

Ingredients (Serves 2)

  • 3 bundles somen noodles (150 g)
  • 1 avocado
  • 2 packs natto
  • [A]

    • 400 ml dashi
    • 1 tbsp soy sauce
    • 1 tbsp mirin
  • [B]

    • 1 tbsp soy sauce
    • 1/3 tsp wasabi
  • Scallions (cut into thin rounds), as needed
  • Kizaminori (shredded nori), as needed

Directions

Pour [A] into a pot and bring to a boil. Immediately turn off the heat and set aside to cool.

Peel the avocado and remove the pit. Cut into bite-size pieces and combine with [B].

Cook the somen, then rinse in cold water until chilled. Drain thoroughly.

Plate up the somen. Mix the natto well, and top along with the avocado. Pour [A] over the entire dish, and sprinkle with scallions and kizaminori.
