Hamukatsu, or ham cutlet, is a classic snack and an izakaya favorite! Use panko breadcrumbs for that extra crispy texture.

Ingredients (Serves 2)

  • 8 slices pork loin ham
  • [Batter]

    • Flour, as needed
    • Beaten egg, as needed
    • Panko breadcrumbs, as needed
  • 120 g cabbage (thinly shredded)
  • French mustard, as desired
    Note

    *Or Japanese mustard.

Dust one slice of ham with flour and top with another slice to make a cutlet. Repeat to make a total of four cutlets. Coat the surface of each with flour. Dust off any excess flour, dip in the beaten egg and coat with panko.

Advice

The flour between the slices of ham acts as an adhesive.

Fill a frying pan half full with vegetable oil. Place over medium heat until the oil is about 170°C. Place two cutlets in the oil and fry for about 2 minutes, turning them over once the surface has set. When crisp and golden brown, remove and place on a tray lined with paper towels to drain. Scoop out any breadcrumbs in the oil and fry the remaining cutlets.

Cut the cutlets, then plate up with cabbage and garnish with mustard.
