Horse Mackerel "Zuke-Don" Rice Bowl

"Zuke" is sashimi marinated in a soy sauce-based marinade. It's most commonly done with tuna, but it works just as well with Japanese horse mackerel, as you'll see with this recipe!

Ingredients (Serves 2)

  • 4 fillets horse mackerel (sashimi grade) (160 g)
    Note

    *Skinned and deboned.

  • 2 tbsp white sesame seeds
  • 2-3 scallions
  • 400 g cooked rice (hot)
  • 1 tsp ginger (grated)
  • 1 1/2-2 tbsp soy sauce

Directions

Cut the horse mackerel fillets diagonally into 8 mm slices.

Place the horse mackerel in a bowl and add 1 1/2-2 tablespoons of soy sauce.

Mix together with cooking chopsticks and marinate for around 10 minutes.

Place a paper towel over a cutting board to chop up the sesame seeds. Cover the tip of your knife with your hand and keep it in contact with the board as you move the handle up and down to coarsely chop up the sesame seeds. Chop the scallions into 2-3 mm pieces.

Add the sesame seeds to the marinade and lightly mix together.

Place the rice in individual donburi rice bowls, top with the marinated horse mackerel and sprinkle with scallions. Garnish with grated ginger.
