Unohana-ni [Simmered Okara]

Ingredients (Serves 4)

10 snow peas
40 g carrot
2 shiitake mushrooms
1 tbsp sesame oil
100 g ground chicken
200 g okara (soy bean pulp)

500 ml dashi (made from kombu kelp and bonito flakes)
3 tbsp sugar
3 tbsp mirin
4 tbsp usukuchi soy sauce
1/4 tsp salt


  1. 1. Cut the snow peas into thin strips, then boil in salted water for about 1 min. Remove and transfer to ice water to cool.
  2. 2. Remove the stems from the shiitake mushrooms, and cut the caps into slices 3 mm thick.
  3. 3. Cut the carrot into thin strips.
  4. 4. Preheat a frying pan and oil it with the sesame oil, then add the ground chicken and stir-fry.
  1. 5. When the chicken starts to look whiter, add the shiitake mushroom and carrot, and continue stir-frying.
  2. 6. When all of the ingredients have cooked through, add the okara and lightly stir-fry, making sure that the oil is evenly distributed throughout.
  3. 7. Add the dashi, sugar, mirin, usukuchi soy sauce, and salt to the okara, then briefly stir, to season.
  4. 8. Cook for 20 min, stirring occasionally.
  1. 9. To finish, stir in the cooked snow peas, then transfer to serving dishes.
