  1. 1. In a bowl, beat the eggs thoroughly, then add the salt and sugar, and stir in.
  2. 2. Lightly oil a nonstick frying pan, then pour 1/4 of the egg mixture in and spread it into a thin layer. Roll the layer of egg up, starting from the near side of the frying pan.
  3. 3. After rolling the egg up, move the rolled egg to the near side of the frying pan and pour the same amount of egg mixture into the empty part of the frying pan, then roll it up again in the same way. Repeat 3-4 times.
  4. 4. Spread a paper towel out on top of a sushi rolling mat, then place the rolled omelet on top. Roll the omelet in the sushi mat, then shape the roll to be rectangular.
  1. 5. Cut into slices 2 cm thick, and arrange on a serving dish.
