Egg and Shirasu Rice Bowl with Sansho Pepper

Ingredients (Serves 2)

3 eggs
4 tbsp parboiled small sardines (shirasu)
3 pinches salt plus 1 pinch
3 pinches sugar
1 tbsp sesame oil
powdered sansho pepper
2 bowls cooked rice, 300 g in total

Directions

  1. 1. Break the 3 eggs into a bowl and add 3 pinches each of salt and sugar, then beat.
  2. 2. Oil a frying pan with sesame oil and preheat over medium heat, then pour in the beaten egg. Use a wooden spatula to quickly stir and make soft scrambled eggs.
  3. 3. Put this scrambled egg on top of the bowls of rice, then add the parboiled shirasu small sardines, a pinch of salt, and sansho pepper to taste, and serve.
