Creamy Annin Tofu

Creamy An-nin tofu

Ingredients (Serves 2)

300 ml milk
100 ml sugar
100 ml water
2 tbsp annin powder (apricot kernel powder)
7 g sheet of gelatin
100 ml fresh cream
Mint leaves, for garnish

Directions

  1. 1. Place the milk, sugar, water and annin powder into a saucepan. Heat while stirring to dissolve the sugar and annin powder.
  2. 2. Turn off the heat, add the rehydrated gelatin sheet, and dissolve using the residual heat. Then strain the mixture through a sieve.
  3. 3. Add the cold fresh cream, pour into individual serving cups, and allow to set in the refrigerator for 1 to 2 hours. Top with mint leaves.
